  1. Combine flour and salt
  2. Cut shortening into flour salt mixture until size of peas
  3. Add water
  4. Knead
  5. Let rest 10 minutes
  6. Form into 2 inch balls
  7. Roll to ¼ inch thick
  8. Use heavy very hot ungreased skillet or griddle
  9. Turn tortillas 3 times and it should be done when small dark brown spots speckle the bread

  1. Slowly add water to flour to make a soft dough
  2. Knead until dough is earlobe consistency and no longer sticky
  3. Form into golfball-sized balls
  4. Dip into flour and roll out to a 7-inch round (¼" to ⅛" thick)
  5. Bake on a preheated heavy iron skillet. When one side changes color turn over, and then press with a cloth using a rotation action. Watch it puff like a football.
  6. Spread with butter to keep soft.

  1. Preheat oven to 500˚
  2. Whip whipping cream
  3. Sift flour into the whipped cream a little at a time and work it in with your hands. Handle as little as possible to avoid stiff dough.
  4. On floured surface roll dough out about ¼ inch thick
  5. Cut to the cracker size you like and place on a cookie sheet
  6. Bake immediately at 500˚ for about 20 minutes or until golden brown.
Recipe Notes

Variation:

  • 3 cups corn flour
  • 2 cups whole wheat pastry flour
  • 1 ½ tsp salt
  • 1 ½ pint whipping cream
  • Mix all ingredients together in a bowl (do not whip cream).
  • On floured surface roll dough out about ¼ inch thick
  • Cut to the cracker size you like and place on a cookie sheet
  • Bake immediately at 500˚ for about 20 minutes or until golden brown.

  1. Preheat oven to 450˚
  2. Combine flour and salt
  3. In another bowl combine eggs and oil; beat
  4. Add egg mixture and flour mixture to water and beat hard for 2 - 3 minutes.
  5. Pour onto greased cookie sheet or onto three 8 inch square pans.
  6. Bake at 450˚ for 20 minutes.
Recipe Notes

Tip: sprinkle with sea salt or sesame prior to baking. Good for making sandwiches.
