  1. Preheat oven to 325˚F
  2. Grease a 13x9x12 inch baking pan
  3. With an electric mixer beat margarine and sugar on medium speed until light and fluffy (about 2 minutes). Add egg yolks and continue beating until well combined, scraping bowl as necessary. Add lemon peel, vanilla, and salt. Reduce to medium-low and add matzo meal, beating just until combined
  4. Press about ⅔ of the mixture over the bottom of prepared pan and bake on the center rack for 20 minutes. Remove from oven and spread preserves evenly over crust. Sprinkle walnuts over the preserves and crumble remaining matzo meal mixture over top. Bake until toppings feels set and begins to turn golden, about 30-35 minutes.
  5. Cool in pan on wire rack.
  6. Cut into squares.

  1. Beat butter and brown sugar until creamy
  2. Blend in flour until mixture resembles fine crumbs
  3. Stir in walnuts
  4. Reserve 1 C of mixture for topping and firmly press remainder into greased 8-inch square pan
  5. Bake at 350˚ for 12-15 minutes or until lightly browned
  6. Beat granulated sugar and cream cheese until fluggy
  7. Add egg, vanilla, milk, lemon juice, and peel
  8. Beat until smooth and pour over baked crust
  9. Sprinkle with reserved topping
  10. Bake about 20 minutes
  11. Cool in pan
  12. Cut into 2-inch squares

  2. Blend in flour and salt
  3. Roll dough into balls
  4. Dip them in a bowl with one egg white
  5. Roll in bowl with finely chopped nuts
  6. Place one inch apart on uncreased cookie sheet
  7. Press thumb gently into centers
  8. Bake at 350˚ for 10-12 minutes
  9. Cool
  10. Fill up thumbprint holes with jelly, jam, or preserves
